“Great beef begins with great cattle.” The Meat Block’s beef is sourced from the 1855 BEEF program. This is an elite line only offered to elite chefs, restaurants and meat markets. Only the very best USDA Choice and Prime Black Angus beef is used in this line. The Angus breed offers natural marbling and produces an incredibly rich beef flavor. The 1855 BEEF program is produced in two specific regions, Nebraska and Pennsylvania, by family ranchers. Only 13% of all cattle qualify for the 1855 BEEF brand. All of the Black Angus cattle used are USDA Certified and meet 10 strict program specifications which ensure exceptional quality and consistency while providing bright cherry red, lean, finely textured cuts.
